Oh...yeah, it makes sense that copper would get damaged--it's a delicate flower of a metal for pans. So pretty, though, if you're willing to spend hours polishing it every time you use it. I've never really cooked with glass. Right now in our kitchen we have a mix of teflon and stainless steel pans (the steel pans have a sandwiched bottom, maybe with aluminum or copper i'm not sure which, so they heat more evenly). I much prefer cooking with cast iron, but I don't own any of my own at the moment.
