yeah, all of that i guess. nice girl with a knife.
i also just think they're really beautiful and nice to look at, if well-made. i don't like the really ornate, flashy ones--i prefer them streamlined but really sharp, made with good steel. and they are useful, from quartering an apple to cutting rope to defending yourself if cornered. all of those uses add up to being able to take care of yourself, so they're symbolic of self sufficiency, self-containment, mobility, independence, etc. (i felt the same way back when i owned a pickup truck--i could fit all of my stuff into it and move myself from one place to another if i had to or just wanted to.)
